Always seek freshly roasted coffee Beans
They're an agriculture product. They're the seeds of a variety of cherries that develops on a tree; they're not manufactured in a warehouse somewhere.
Like all other agricultural crops, coffee beans are best when freshly brewed. In the optimum state of freshness, just several days after being roasting, the sugars are sweet, the natural oils put off vibrant aromas, the acids are crisp and balanced, and there's very little bitterness.
But the beans begin to degrade rapidly. Sugars disappear, oils disperse, the acids are broken down into bitter compounds, and once clear flavor becomes murky and unrecognizable.
The lack of flavor and freshness can reduce the flavor and quality of your coffee drink, making it difficult to really appreciate the coffee and truly enjoy the moment.
This is the general rule: coffee beans are freshly ground after being roasted. Pre-ground coffee? These grounds will have between 20 and 30 seconds of maximum freshness before beginning to decay.

Don't be fooled by "best by" dates on bags. They are always months away and the roaster is trying to make you think that the beans are in peak freshness for weeks, not months (hint: they're not).

The top roasters in the industry have selected ten levels of roast that beans may (but do not have to) traverse. The level at which you is up to you:
Green This means that beans retain their virgin green essence even when they begin to get hot.
yellow: The color will change to yellowish and beans emit a grassy odor.
Steam Steam is a rising phenomenon that rises out of the beans. This is the result from the water inside the beans going out of the beans.
Initial Crack (Cinnamon Roast): Here's where the real roasting begins. The sugars in the beans are caramelized and a crackling sounds is heard. It's that of popping popcorn.
City Roast: Following the initial crack The beans have attained City Roast, the minimum standard roast level that is acceptable for the majority of people's grinding and brewing preferences.
City Plus Roast: After the further caramelization sugars, and the influx of oils, beans increase in size and extend to City Plus Roast. This is a sought-after, and most common type of roast to use.
Full City Roast: Beyond the boundaries that are offered by City Plus is the Full City roast, a darker roast that brings the beans to the edge of a second cracking.
Second Crack (Full City Plus Roast): The beans undergo a second, more violent cracking process before they enter Full City Plus. This roast will expose more layers of intenseness to the flavor.
The Dark Roast (French Roast): The smoke will be sweet, the sugars get as hot as they can without ruining the flavor of the beans, also the beans' overall shape will change. This is the highest level of roasting inside the limits of good flavor.
